Abstract

We have determinate the nitrate levels in different varieties of vegetables cultivated in Tunis agricultural area. Our results showed high levels in vegetables with flower as canliflower, globe artichoke (870-954 mg/kg), in roots and tubers like carrot, radish and turnip (800-1500 mg /kg). The highest quantities were determinate in leaves : spinach, parsley (1870- 2032 mg/kg).
These values are high especially if we take into consideration the important consumption of some of these vegetables by the tunisian. A sensitization action must be led in order to decrease the use in agriculture of chemical and natural fertilizers which are the main source of nitrates in vegetables.
